Deco at Peppers Spring Retreat



Over its 70-year history, Peppers Springs Retreat has evolved from a country pub and guesthouse to the four-star, award-winning boutique hotel, restaurant, day spa and conference venue that it is today. In 2002, the return of the hotel to its dazzling Art Deco glamour earned it the Australian Hotels Association State Award for Excellence for Best Redevelopment under $500,000. DECO Restaurant presents modern Australian cuisine, in an elegantly relaxed setting, seven days a week and is open for Breakfast, Lunch and Dinner. The DECO team have worked with some of the best chefs in the industry and it shows.

Before moving to Hepburn Springs, six years ago, Head Chef Clinton Camilleri worked at Melbourne restaurants Sicilian Vespers and Blakes and at the Warrenmang Vineyard restaurant in Moonambel. After a stint at the award-winning Lake House in Daylesford, Clinton moved to Peppers Springs Retreat where his innovative, contemporary Australian cuisine incorporates high quality, locally grown produce such as lamb, beef, venison, trout, yabbies and berries.


An autumn menu at the DECO Restaurant might include such mouth-watering entrées as smoked trout and saffron tortellini with caponata, roasted yabby tails and nero sauce, or duck terrine with pear and Muscat puree, muscatels and toasted brioche. Main courses for the same menu feature Tuki Lamb on skordalia with a braised shank, white bean and roasted pepper cassoulet or Denver leg of venison with a glazed shallot tartin, root vegetables and a spiced apple sauce. Wildly enticing desserts include blood orange brûlée with citrus salad and lemon verbena gelato, and chocolate and hazelnut baci tart with soft centred chocolate fondant pudding and mint gelato. A heavenly cheese platter bears the Holy Goat trinity of Black Silk, Tarago River Blue and Romney Fresca.


For a pre-prandial cocktail or an after-dinner nightcap by the fire, the Club Lounge is a great place to wind down. The menu at the Retreat Bar invites guests to choose two, three or more dishes to assemble their own plate of taste sensations - great for sharing with friends over drinks. Snacks might include tasty morsels such as crispy fried whitebait with aioli, roasted chat potatoes with rosemary and garlic, and marinated chicken wings with sweet chilli sauce.


The extensive wine list at the DECO Restaurant and Retreat Bar represents a broad cross-section of Australian and imported labels, among them local heroes Big Shed, Cavalier, Ellender Estate and Hanging Rock.
