The food philosophy of Wild Birch is based on rural gastronomy; preserving and promoting the regional identity through dishes flavoured by the wonders of nearby nature. It is Wild Birch’s dedication to quietly integrating nature’s Super Foods that has ensured Peppers Mineral Springs Retreat’s place as one of the Healing Hotels of the World. The Wild Birch chefs are genuinely enthusiastic about the concept of cooking with fresh-on-the-day local ingredients; drawing on the abundance of Daylesford regional fruits, vegetables, and agriculture to create menus that genuinely work with the seasons. Frequently changing menus depending on what is in the kitchen gardens and orchards on that day. The restaurant’s on-site vegetable and herb gardens are already in the process of being replanted, and gardens and orchards out at Spa Country’s 400 acre farm, Birch Estate, are fast becoming a key source of produce. The ultimate aim is to eventually self supply the majority of fresh produce and rare meats for Wild Birch and other Spa Country food dining venues.
Feel like pre-dinner drinks, digestifs or just lounging around before dinner at Wild Birch? From July, you’ll be able to sit back and sip the night away in The Tipperary Bar & Lounge; destined to become the new darling of the drinking crowd with a style that is one-part private club, two-part return of old world glamour, and just a dash of Mad Men. The experienced bar manager, Lucas Butcher and his team, are already in the process of putting together a classic cocktail menu; simple yet fine tribute to cocktail history, starting with The Sours from the 1800s and striding purposefully on to modern classics. Head here from July onwards if you want to hang with a well-heeled clientele sipping sublime cocktails, aperitifs and cognacs.
Breakfast and Lunch is just as delicious as dinner with the skills of the Wild Birch Chefs overseeing the launch of the much anticipated sunny and airy Conservatory, also opening in July. Elegantly furnished with an inspired assortment of antique and modern conservatory furniture, The Conservatory will be an enchanted haven for eating, drinking and mind-blowingly good coffee. For guests who love nothing more than to relax quietly with a good book or newspaper and a fine pot of tea, or a light snack, this will the place to be. High Teas under The Arches will also be served here, as well as under the iconic arches of this beautiful hotel. Remember, High Tea is only served on Saturdays and Sundays from 2.30pm – 5pm, so booking is essential
