
In 1990, Julie and Sandy Cameron established Meredith Dairy with the aim of producing world class, farmhouse Australian cheeses and premium quality sheep's milk yoghurt.
Located near the small town of Meredith, the property has been in the Cameron family since 1924. Until the 1980s the 800-hectare farm produced beef, wool and prime lamb. Realising the need for diversification, Neil and June Cameron encouraged their son, Sandy, to pursue his vision of crossing their wool-producing sheep with East Frieslands. The result was the creation of a prime flock of milking ewes.
While ewes lactate for only three to nine months, Sandy's skill in animal husbandry ensures a consistent milk supply throughout the year. As the pastures change with the seasons, so do the characteristics of farmhouse cheeses and the subtle variations in flavour and texture are part of their wonderful appeal.

Meredith Blue (sheep's milk)
Matured for six to eight weeks, this is a soft, mild blue cheese with a natural crusty rind, reminiscent of French Roquefort in flavour. In spring, it is mild in flavour and soft in texture; in autumn and late winter its texture is semi-firm.
Woodburn (sheep's milk)
Inspired by French farmhouse Brie, this is a white mould ripened ewe's milk cheese. In spring it has a mild flavour and soft, silky texture with a creamy centre. When the sheep are moved to irrigated pastures in summer, the cheese becomes firmer but is still deliciously creamy. When fully mature, it has a full-bodied flavour.
Traditional Pure Sheep Milk Yoghurt
Sweet with a high viscosity and a mild flavour, this is the connoisseur's yoghurt and is found on the menus of fine dining establishments across the nation.
Pure Sheep Milk Yoghurt
Made with acidophilus and bifidus cultures, this yoghurt is milder than the Traditional yoghurt, and the texture less viscous. Both yoghurts are packed in glass jars, enhancing their quality.
Traditional Fetta (goat's milk)
Fresh, clean tasting with a sliceable texture, this marinated fetta is infused in oil, garlic and fresh herbs.
Fromage Blanc (goat's milk)
Fresh cheese in the style of French farmhouse: creamy and delicate with a subtle hint of chèvre.
Fromage Frais (goat's milk)
A fresh, soft curd cheese with a creamy texture, the taste is mildly citrus with a subtle chèvre flavour.
Marinated Goat Cheese
Soft textured cubes of goat's milk cheese in garlic-infused extra virgin oil with spices and fresh herbs. Great with roasted vegetables, grilled on crusty bread or with antipasto and salads.
The Ashed Pyramids (goat's milk)
Reminiscent of cheeses made in the French province of Berry, this is soft and creamy with a smooth mouth feel. When aged, the ashed surface is hidden beneath a white mould which when cut, reveals a wonderful black and white contrast. Available both fresh and aged.
Caprini (goat's milk)
Small, thimble-shaped cheeses are air-dried and then put into a high humidity room, allowing white mould to grow on the surface. The initial flavour is one of mushrooms followed by a clean, mild citrus taste.
Cargarie (goat's milk)
Younger than the Caprini and with a softer curd, the white mould surface is similar to that found on Australian Camembert. The texture is velvety, the flavour mild and delicate.
Farm Chèvre
Made from the freshest milk with the mildest lactic cheese cultures producing a clean, fresh flavour. Versatile, it can be served alone or with other fresh produce.
