
Sher Wagyu beef is the ultimate eating experience supplied directly from the farmer. Nick and Vicki Sher have been breeding Wagyu cattle since 1992. They have combined the finest Wagyu bloodlines with a carefully managed paddock to plate beef operation - Beefcorp Australia, based at Ballan, Victoria. Beefcorp's unique production system ensures the cattle are raised under the highest standards of animal husbandry, with Primesafe and HACCP accreditation.
Wagyu means Japanese beef and these cattle have been bred in Japan for over 2000 years. No other breed of cattle has the genetic potential to produce beef with such high levels of marbling and fine textured meat. Marbling is the fine fat contained within the muscle. It enhances flavour, juiciness and tenderness and makes for a melt in the mouth experience. Sher Wagyu beef is primarily from Wagyu x Holstein, the traditional Japanese cross, and produces outstanding beef.
Sher Wagyu beef is assessed by independent graders accredited by Ausmeat. The beef is packaged into three labels based on marble score.
Black Label - Marbling 8-9
The premium level of marbling normally seen only in Japan.
Silver Label - Marbling 6-7
A high level of marbling for excellence in Wagyu beef.
Red Label - 4-5
Medium level marbling for a Wagyu experience.
